I am not sure if this has been ask twenty thousand times, but. How do you target your escorts? Is there a way to free them? I must know this! Listen, if this has been ask lots. Just give me a quick answer... It's more typing to just say look it up!

Press the option key as you cycle through targets, once you see one of your escorts selected, hail it. Then you can release it or just say "hi"

Oops, sorry, I got it, thanks alot! Seriously, I had pirates after me cause I took over to many scouts and couriers! Lol. I went shuttle - scout - courier - then i captured a argosy! Probaly gonna capture a corvette too By the way, couriers are awesome! Just watch out, you dont get hit with missles

Lol. That is well known feature, get too many cargo ships as escorts and you will meet Pirates. Means to make it harder, but is just annyoing as you can dodge them. You captured a Argosy in a Courier? Wow, how? But dont try capture a Corvette unless you get about 10 Missiles in your Argosy, the Corvettes power is enough to damage a Kestrel heavily if fought with primary weapons only. Couriers are good, but some prefer Scoutship. Its just a dispute, like Lightning vs. Rapier.

I'm not sure if this will work for you, but on my computer, hitting the key between the left control and left alt keys (it's got a widnows emblem on it) will count as an option key for talking to my escorts.
But that key has a bug, its "sticky", so it will be pressed until you alt-tab out. The Ctrl key on the right side of the keyboard can also be used, and it has no such bug.
Maybe you can change it in the prefs?

Meh, nope. But as for the pirates chasing after you, you can use it to your advantage. Speed off to a system with a disliking towards you and blast those pirates. Jump out of the system, jump back, and do it again until they like you again. It's the music number Ciiirrrcle ooof Liiife.
