So if I wanted to start creating artwork for this thing, what kind of format should it be in?

.pic (or sometimes .pict) format seems to work well.

I use bitmaps and picts for the sprites, the animations are either a collection of sprites or perhaps a gif? The movies would be in .mov format I presume

for movies what kind of compression? Sorenson?
I think the smart thing to do with artwork would be to keep it in your applications' native formats... ie, a photoshop doc, etc, so that you can go back and easily edit later.

I think sanehatter's got the best idea, but out of interest PICTS and .mov formats are what I use at the moment.
