what 3d format...

What exported 3D format will coldstone need? Will we be able to use Maya or 3ds MAX with coldstone?

Coldstone supports 2D graphics. So you'll have to export as jpeg, gif, or png.

but then how is the different walking directions accomplished? there are many things shown in screenshots that could not be done with jpegs or gifs.

Well, to do walking directions, I think 8 different animations are required. You could get by with only five (up, down, left-down, left, and left-up, and flip the 'lefts'). Play Zelda (original and gameboy) or PoG and you should understand.

Have a look at the recent progress log entries (the screenshot one). Coldstone has a built in animation editor, so just import your 2D graphics frame by frame, and then animate them within the engine itself.
