Does anyone know what exactly a 'planet ship' is? It's a flag that you can set for EVN in the shďp resource, and it specifically refers to a ship that can only be hit by planet-scale weapons. But does this gain for a ship any extra properties, such as the ability to have things dock at it and the etc?

Nope, it just means that nothing can hit it except planet-type weapons. Useful for mobile stations and really big ships.
