You just need to abort the mission before you try to board it is all. However, you lose all the fancy über Voinian weapons if you try to outfit it yourself (the weapons have no assigned outfit resources), so you're best off capturing them as escorts.
I've always thought I would also lose my sanity trying that ... repeatedly :(.
Well, if you're going to try, you'd best have the UE Marine Gear and escorts with a lot of Crew (Voinian Cruisers come to mind). Once you capture a few Dreanaughts, it becomes much easier to capture the rest; trust me.

Take the first for yourself. Gives better odds for the next five. Then capture whatever you want for yourself. Enhanced Arada comes to mind. Then get the cloak, NPD and siphon.

How do you propose to get both the Enhanced Arada and the Plasma Siphon? I'm aware that you can do the Igadzra and Zidagar Strings together, but I thought that the Azdargi string was mutually exclusive to the others no matter what you do?

I prefer to do the Azdgari mainly because of what they offer for ship performance enhancement.
