Dreadnought

How do I kill the Voinian Dreadnought with a UE Carrier,10 missles a helian escort (captured) and 5 UE Fighters?

I would suggest getting some cannons or turrets at Pareen Station. You have to complete some cargo missions to be able to get outfits from it but it lets you get some of the voinian technology.
First you have to destroy the interceptors. Just use the monty python with them. Then use the same method with the Dreadnought. I'm not sure if the Carrier is maneuverable or fast enough to do this....but you can give it a try. I've tried to do it other ways. But I couldn't even get close to finishing it off. Its extremely difficult to win in an all-out battle with the dreadnought unless you have about 7 powerful escorts.

Not So!!! The best way I have found to beat the Dreadnought, without the Monty Python trick is to first kill the fighters. Then let the UE forces fight it out, leaving usually only the big ol' bad Dreadnought. Now, be in a ship like the Igazra with plenty of shields but still maneuverable. Buy a Miranu defense pod system, max out your first weapon, and then blast that slow pig with defense pods and laser fire. It dies quick and easy.
