There is a really good post somewhere on this, but I'm too lazy to look for it.
Basically - Fire at the Fire Guardians when their eyes glow green. I use ICE to fire at them because (I think it was Zelda who first pointed this out) it just seems right to fight fire with something really cold.
Leap from one ledge to another and if you time it right you can leap over the fireballs they'll spit at you. I try to stay on the top ledge.
I usually try to concentrate on one at a time - the second one is really easy to hit (and avoid the fireballs) once the other one is dead.
