what are the defense fleet sizes for the planets in the sol system, or are they endless, and.... are there any endless defense fleets?

No it's not. I've done it 3 times (with and Alien Marauder) . It takes about 3 hours. As long as I'm bragging, I dominated Ruby in less that 20 minutes (in EVGE) with an Alien Command ship and the slicer.

Does it seriously make sense for major planets to have small piddling defense fleets that could be overtaken by the simplest of organized pirate fleets? No.
I finally got a Rebel Cruiser! I also started taking over some planets.
I think independent planets are the easiest.
