I personally never use them...If I get any ship with fighters I never use them....And if there is a plug I sell the bay so I can get more weapons..I think the fighters A.I is to pathetic to come in handy...Unless your going after puny ships...But I personally have no use for them..You?

i had four fighters once, and i launched them all. they just sat there for systems, following me around. as soon as i was attacked, they all got destroyed. i sold the bay immediatly. they are useless, and i now refuse to use them.
an idea: keep the bay, but sell the fighters. when you get in a fight with a kestral, try disabling the lightnings and when you destroy the kestral, board the fighters. they go into your bay, and you can sell them later. the lightnings take 3 missiles to be disabled.

I use the fighters when I get a ship that has decent ones. The only decent carried fighters in standard EV are mantas and lightnings.
I keep the fighters launched, and send them to attack when something shows up that they can kill such as a clipper, argosy or another fighter.
Unfortunately, by the time you have a ship with fighters, you are fighting large ships that fighters are useless against. I frequently choose to ignore small pests when fighting large ships, because the effort of targeting and pressing F is too much.
Some plugs provide a Rapier bay. The rapier is very good against large ships-- tough enough to survive multiple passes, and deals massive damage.
I think I've already said this on another thread, but my Kestrel just wouldn't be as effective without the lightnings. They can't take out larger ships on their own, but they can handle confed patrol ships or gunboats easily enough. I don't deploy them against anything smaller than a corvette unless I'm outnumbered, they're secondary weapons are a real help if they are attacking the same ship you are.
I seldom use fighters, but that's mostly because the only ships in the game that carry stock fighters are big and slow, while I generally prefer to fly something large but fast, like a Corvette. The Hawk fighters are pretty useless. (Of course, the Corvette Destroyer with a Rapier bay from my Talon plugin satisfies thish requirement, but that's another story.)

I use Lightning fighters against things like Defenders and Argosies <NEVER a target with heavy rockets> I never use any other fighter, except Hawks when I'm really rich and can afford wasting them by sending them to go get themselves killed.
Most of the time, however, I don't have fighters, because the only fighter bay that fits on a Lightning is the Hawk bay <the only one you can get, too> and that's pretty useless, and takes up all the space.

Escorts are invaluable when conquering a planet. The planets ships ignore them and are consequently destroyed by them (In my pilot file Sol would have never fallen if I hadn't hired a bunch of defenders).
BTW you don't need to own a bay to steal escorts and sell them. This was where one of the main value of the Tractor Beam came in. Disable all lightningsand disable the kestrel, tractor Lightnings into Kestrel and steal both lightnings who have become "ammo." Alternately, you could get up to five or six lightnings in your bay this way.
