I read a FAQ saying you will get a higher % of capturing the ship if you have more crew members. How do you get more crew members? Are they included when you buy the ship?

Yup, they come with the ship. In general the larger ships have more crew members - you can check the number by going to a shipyard, selecting a ship, and clicking "info". Unfortunately there's no way to change the crew numbers of a particular ship in the original EV (unless you hack it, maybe)

If you hire some escorts, I think their crew count is added to yours. This is especially useful if you are trying to capture ships.

if i remember correctly, their crews do not count as much as your own. your capture percentage is also based somewhat on your current percentage of shields, so if you wait till youre fully charged before trying to capture a ship youll have better luck.
note that you have a 100% chance to 'capture' a ship if you have a bay for it that isnt full (so if you have a kestral with no lightnings in your bay, youll ALWAYS capture any lightnings you board and add them to your bay automaticaly).
