I'm just curious if there's any way to alter the total number of escorts you can have from 5? I see a change in Nova from EVO, in that if you have more than 5 ships, they actually spread out like a fleet, which is very nice. I'm hoping there's a way I can add just one more escort however.

It is, indeed, hard coded. Your left testicle is safe for now.
The limit is 6, not five. And you can carry oodles of fighters.
You can increase the number of ships under your command with fighters and mission escorts. So if you really want more, you can always put in a mission that gives you a couple of escorts. You could even make it set a rank that drains your cash if you feel so inclined.
However, after enough escorts (I don't remember the exact limit) They stop forming up behind you and just stay underneath you. Also, the total number of escorts is limited by the max-ships-in-system of 64.
You're right it is 6, I suck at counting:
1- Dreadnought 2- UE Cruiser 3- Iggy 4- Zidra 5- Adzy 6- Crescent Warship
If only I could get 1 more slot so I could get a Turncoat.....

And actually, there's some room for defense fleets. 55 total slots for normal ships, if I'm right.

I don't think that they stop forming up until probably 16-20 escorts/fighters or so. The only time I ever hit the limit was in the Unrelenting with every bay maxed out.
Why don't you pick one of the ships to fly yourself? That'll round out your fleet nicely.
