Well, here are white minotaurs. As I recall, though they're just souped-up versions that can be found occasionally in Minataur areas. You also fight one in the swordsmn's arena. However, Dee is probably right.

I've never seen a white minotaur excluding on one occasion. That was in the final level(somewhere around 14 or something) of the Swordsmans Arena.
