It depends on how you define easter eggs. If you're thinking about things that occur outside the game's normal reality, then all there really is are the forklift, the haikus (press X on the main screen), and the various texts that you can get by holding down modifier keys while clicking the About button. If you count things like the U.E.S. Incontrovertible and the Disco Bison, there's a few more.

Well, considering it didn't even work in EV, it surely doesn't work now.

Actually all the real easter eggs that were in EV are pretty much identical in EVO -- I don't think anyone bothered to do anything with them (but I'm sure they have a few extra goodies in store for Nova).

It did work in EV-you started up holding a bunch of keys, read the credits, and started a pilot file. The ship with the highest tech requirement in any shipyard you visited had the SOL description. It worked for me...
