the UE get thrashed, smashed, or in some way eliminated. Let me use a few examples:
Reign of Chaos I & II - UE is conqered by Galactica, then goes to new galaxy and F-25, then after some battles, gets annihilated by Glactica.
Golden Horizon - UE is conquered by Voinian Empire
The Light Behind the Shadow (I know, it's been a while since then)- UE government is, for some reason, replaced by the Corocian government.
So why is is that the UE always had to be wiped out in some way or another in virtually every webstory? What kind of rule is this?
I was going to start a pro-UE "Battle for Voinia" webstory at one time or another, but I don't have the time.

It's an interesting question, and i'm honored to answer it.
You have to understand that the first portion of the LBS was really a trial period to get used to a certain style. We made the mistake of trying to utilize the current EVO nations. Even when we assumed command of those nations, the existing alignments kept us from doing so. What I mean is, people would suggest uprisings of the UE people would happen if they were forced into working with the Voinians, as well as for any other non-EVO alliance. It soon became too much to handle and we settled in to Corocian, Oasan, and Azdgari (Carno was determined to crush the other strands anyway and we had no players for them) positions. This change was understood as a necessary requirement for any soon-to-be publishers that played in the LBS I, and thus in their own stories the alignments were kept to EVO solidly or new governments were overlapped.
Towards the main question, the removal of these alignments led the fragile UE survival that was involved in EVO into the full blown war, and to the strands or even Voinians spreading to conquer the east they were no match.

Actually, yes. Anyone who plays EVO quickly realises that it's a good idea just to dump the UE, at least until the UE Cruiser comes along. The only good ship they have is the UE fighter, really - maybe the carrier, I suppose, but few people see that.
As for Reign of Chaos, that's mainly down to me. I kamikazed the UE when I got bored in the first game, and in the second I agreed to have Paladin captured. I'm just not very competitive, really - at least not in my own webstories.

I always get bored reading webstories, anyway. I always get so tired of reading the hundreds of posts.
One question I've always wondered, though. Blaze weapons have a physical core, according to EV:O. Does this mean UE ships must carry ammunition? It would seem like UE ships would be the largest, in order to hold enough "blaze rounds" for piched battles?

Every weapon has a "physical" core. Otherwise, they would create a vacuum Now, do you mean that the shots contain a solid core? If so, where did you read that?

You forgot one: Dark Tide - UE were pretty much cripped by firebombings, nuclear attacks, chemical weapons, and massive supercruisers used by the Corocian Empire (no relation to the LBS Corocians), controlled by me.
As for why it all happens: Dunno. Someone is usually the Voinians and they always seem to take out the UE first. Now, if someone WASN'T the Voinians and someone was the UE, Emalgha, and Hinwar, then there would be a good chance of the Voinians dying.
And as for your webstory; I might be interested in being the Hinwar.

The UE always get killed in stories because the UE are the least interesting of all the races. It's like, we've all been there, done that. Besides, the UE have had hypespace for how long and haven't even explored the galaxy, pathetic.

From Override Data 1, dësc resource ID 3001, "Blaze Turret": This free-rotating turret mounts twin blaze cannons which alternate fire.
