I have a really strong feeling that you can make escorts attack specific, even non-hostile targets, but i can't work out how to make the buggers do it. Some help would be greatly appreciated

No, you can't control escorts in this manner. This is only possible with fighters that you launch from your own ship, like the fighters that launch from a UE Carrier or Voinian Cruiser. Fighters can be ordered to attack a specific target by selecting it and then pressing F.

but all u have to do is hit the target with one bullet and ur escorts will then attack it. thats almost as good...
