Still need mission ideas..
I think you sould do something the hasn't been been done in the series yet. For example, we know that Starfleet has had wars with both the Cardassians in TNG, (before the Dominion Wars) and the Romulans before TOS, but these wars don't actually take place in the show they are only mentioned by the characters in past tense.
I'm a Romulan fan myself. And there's probably the most conflict when the three big factions are the Romulans, Klingons, and Federation all fighting each other. You can work in a few TOS episodes along with it, like The Enterprise Incident. Gorn and Tholian options would be a plus.

The best TOS romulan episode (that is doable in Ares) would be Balance of Terror... nothing like a cloaked romulan sneaking up on you to ruin your day
