How can you make it so that a ship is only avaidable to buy and not as an escort in EV?

Just make it avaliable only on planets without bars, I guess..

Easy -- set its HireRandom value at 0%. In the NovaTools shďp editor, this is the last field in the third column, right underneath the BuyRandom field and above the "Show if Requirements are True" check box.

Correct me if I'm wrong, but I think EV/EVO don't allow you to hire a ship as an escort if there is no escort dialog desc.

nope. I've made a few Confed and Rebel ships which I only want avaidable to buy, and I haven't put a hire escort dialog in, but they're still avaidable to hire.
I know it's possible because you can't hire any Confed or Rebel ships in the game.
I believe you cannot hire a ship if it is mission bit controled (eg you have to have completed a certain mission in order to buy it). I don't know why though.
