A moveProc is merely a function that is called for a sprite when SWProcessSpriteWorld(mySpriteWorld); is called. I forget exactly how to make these (the last time I was working with SW was summer '99. I was working on a Super-Mario-Bros-like-game, but I never finished it. FYI, I'm almost done with a non-spriteworld game), I think it was some function like SWSEtSpriteMoveProc(). You pass it your sprite, and the name of the function you want to use.
